Pineapple Jalapeno Jam
Ingredients:
– 3 cups diced pineapple
– 2-3 jalapeno peppers, seeded and finely chopped
– 1 cup granulated sugar
– 1/4 cup apple cider vinegar
– 1 tablespoon lemon juice
– 1/2 teaspoon ground ginger
– Pinch of salt
Instructions:
1. In a saucepan, combine the diced pineapple, chopped jalapeno peppers, granulated sugar, apple cider vinegar, lemon juice, ground ginger, and a pinch of salt.
2. Stir the mixture well to combine all the ingredients.
3. Place the saucepan over medium-high heat and bring the mixture to a boil.
4. Once boiling, reduce the heat to low and let the mixture simmer for about 20-25 minutes, stirring occasionally, until it thickens and the pineapple softens.
5. As the jam cooks, use a spoon to skim off any foam that forms on the surface.
6. Once the jam has thickened to your desired consistency and the pineapple is soft, remove the saucepan from the heat.
7. Allow the jam to cool slightly before transferring it to sterilized jars.
8. Once cooled, seal the jars tightly and store them in the refrigerator.
9. Serve the pineapple jalapeno jam as a condiment with grilled meats, cheese platters, or use it to add a sweet and spicy kick to sandwiches and appetizers.
